While it’s much too hot here for Al Fresco dining right now (we’ve had a record high heat wave all week), I’m still dreaming about hosting the first summer Al Fresco dinner at our new house once our boxes are empty and the temperatures have dropped a little.
As a July baby, I’ve always been attracted to outdoor activities during this time of year, and there’s nothing like dining outside in the summer—soft twilight skies, a warm breeze, the clink of glasses under string lights. Whether it’s brunch on the patio, a sunset dinner party, or casual bites in the backyard, al fresco meals are a seasonal joy worth savoring.

Grilled Corn & Avocado Summer Salad
A light, colorful salad bursting with summer flavors.
Serves: 4
Prep Time: 15 min
Cook Time: 10 min
Ingredients
- 2 ears of corn, grilled and kernels removed
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt & pepper, to taste
Instructions
- Grill the corn on medium heat until slightly charred. Let cool, then slice off the kernels.
